Anthony's Fish Grotto

BBQ Seafood Kabob

Per serving:

3 oz. Swordfish, cut in 3 even chunks(or other firm-fleshed fish)
2 each Scallops
1 each Shrimp, 16/25 size
1 each Large mushroom
3 each Onion pieces
3 each Red pepper pieces
1 each Bamboo skewer-10 inches
½ cup Teriyaki Sauce(enough for 4-6 skewers)

Cut onion and red pepper into pieces about the same size as your Scallops and Shrimp.

Thread mushroom, swordfish, pepper, scallop, onion, shrimp, pepper, swordfish, onion, scallop, pepper, swordfish onto skewer.

Baste with teriyaki sauce and grill over hot coals for 5 minutes per side, total of no more than 10 minutes, or until fish is done.

Baste again with teriyaki and serve over bed orf white rice.

Serve with Caesar salad and a loaf of Sourdough French bread.
